Baked Feta Parcel

March 6th, 2009 · No Comments

Yet more allegations that Yumblog, 42, has been having a sordid (and utterly predictable) affair with a desperate publicity-seeking blonde slapper, 37. This is of course untrue, and to prove our innocence we bribed bought Mrs Yumblog, 33, a fucking massive diamond ring from fucking Theo Fennell!

Baked Feta Parcel

Preparation time: 10 minutes
Cooking time: 10-15 minutes
Skill level: easy
Serves: 4 as a side dish
Recipe: Wa’ro Magazine

Ingredients

  • feta – 200g
  • 2 large mild red chillies (think they are called ‘Fuego’)
  • ripe tomatoes – 200g – skinned and de-seeded – finely chopped
  • 3 spring onions- finely chopped
  • olive oil
  • fresh mint – good handful – chopped
  • s & p

Heat the oven to 200C/gas mark 6

Cut the feta into 12 blocks.

Finely chop the chillies, tomatoes, spring onions and mint and mix with a generous slug of olive oil.

Take a sheet of tin foil and line it with a sheet of baking paper. Place 6 chunks of feta in the middle and spoon over half the mixture. Layer the 6 remaining pieces of feta on top of this and spoon over the rest of the mixture. Season.

Baked Feta Parcel

Fold up the foil/paper into into a parcel and seal by crimping the edges.

Bake in the oven for 10-15 minutes.

Serve.

Verdict: A great success. As our guest said, this is definitely the way ahead for eating feta.

Drink: Yarp.

Entertainment: Much talk of the ‘MasterChef’ final.
