What could be more comforting and warming than soup? Porridge perhaps. So why not combine the two and make this silky smooth winter treat. (Remember to take a photograph before you eat all the soup )

Recipe: Shirley Spear, Three Chimneys, Colbost, Isle of Skye
Ingredients
- potatoes – peeled and diced – 600g
- 2 medium onions – finely chopped
- oatmeal (porridge oats) – 2 rounded tbsp
- vegetable stock – 1 litre
- milk – 300ml
- double cream – 200ml
- nutmeg – a good grating
- oil or butter
- s & p
Sweat the onions in the oil or butter for a few minutes. Add the potato, stir and continue to cook for a few minutes more.
Add the stock, cover and simmer for 20 minutes.
Add the oatmeal and cook for a further 10 minutes.
Remove from the heat, add the milk and blend to a smooth liquid.
Return to the heat, add the cream and a generous grating of nutmeg and season to taste.
Serve with a sprinkling of chives.
Verdict: A hearty, creamy, comforting liquid meal – the oatmeal seems to add texture rather than flavour.
Drink: Water from the water cooler.
Entertainment: Eaten from thermos at desk at work – so idle surfing between guardian, bbc and b3ta websites.
I love the photo and caption! =D
