Potato and Oatmeal Soup

What could be more comforting and warming than soup? Porridge perhaps. So why not combine the two and make this silky smooth winter treat.

Potato and Oatmeal Soup

Ingredients

  • potatoes – peeled and diced – 600g
  • 2 medium onions – finely chopped
  • oatmeal (porridge oats) – 2 rounded tbsp
  • vegetable stock – 1 litre
  • milk – 300ml
  • double cream – 200ml
  • nutmeg – a good grating
  • oil or butter
  • s & p

Sweat the onions in the oil or butter for a few minutes. Add the potato, stir and continue to cook for a few minutes more.

Add the stock, cover and simmer for 20 minutes.

Add the oatmeal and cook for a further 10 minutes.

Remove from the heat, add the milk and blend to a smooth liquid.

Return to the heat, add the cream and a generous grating of nutmeg and season to taste.

Serve with a sprinkling of chives.

Verdict: A hearty, creamy, comforting liquid meal – the oatmeal seems to add texture rather than flavour.

Drink: Water from the water cooler.

Entertainment: Eaten from thermos at desk at work – so idle surfing between guardian, bbc and b3ta websites.
