Happy New Year. It’s 2008 and it looks like the year ahead is going to be shit.
This is based on a recipe from Gregg Wallace’s excellent ‘Veg’ book. He goes to my gym don’t you know … spends a lot of time working on his abs.
Preparation time: 10 minutes
Cooking time: 30 minutes
Skill level: Easy
Serves: 2-4
Ingredients
- 1 onion – finely chopped
- lettuce – 200g – chopped
- peas – frozen – 350g
- vegetable stock – 1 litre
- butter – 25g
- mint sauce -3tsp
- plain flour – 1tbsp
- sugar – 1tsp
- s & p
Melt the butter in a large saucepan, add the onions and cook gently until soft.
Add the lettuce and cook for 2 minutes.
Stir in the flour and cook for a further 2 minutes.
Add the stock, peas, mint sauce and sugar, bring to the boil and simmer for 20 minutes.
Liquidise and bring up to heat. Serve with a swirl of cream or creme fraiche.
Verdict: A good refreshing soup. You can of course use fresh mint instead of mint sauce.
Drink: We have recklessly decided not to drink alcohol in the 3 weeks between our respective birthdays.
