A delicate piece of cod smothered with cream and cheddar and then baked along with avocado – now this is a retro dish the great and terrifying Fanny would be proud of.

Ingredients
- 2 skinless cod fillets
- double cream – 140ml
- mature cheddar – 150g
- 2 ripe avocados – stoned, peeled and sliced
- olive oil – generous slug
- basil leaves – torn – good handful
- s & p
- peeled prawns – 150g (optional)
Season both sides of the fish and place in an oiled baking dish.
Toss in the avocado.
Add prawns if using.
Pour over the cream and sprinkle with the cheese.
Chuck in the basil, pour over more olive oil and give it another twist of black pepper.
Place in a preheated (220C/gas mark 7) for 15-20 minutes.
Serve.
Verdict: As you would suspect, this is quite a rich dish what with the cream and melted cheese and all. Enjoyed by both although Blogger-D remains unconvinced by cooked avocado.
Drink: A rough red in our new Basque tapas glasses.
Entertainment: ‘Blakes 7’, series 3, episode 13 – Terminal. In the final episode of this series Avon fucks up good and proper, Zen dies, Blake dies (hmmm), Servalan dies (hmmm) and the Liberator is eaten by slime and blows up. Cracking good stuff.
