Double Chocolate Truffles

If the true meaning of Christmas is giving gifts which credit you with the greatest amount gratitude for the least amount of effort, then these truffles are a winner.

Double Chocolate Truffles

Preparation time: 30 minutes plus 2 1/2 hours cooling and setting time
Skill level: Easy although there is a knack to making them a uniform size and shape
Makes: 40ish

Ingredients

  • good quality plain chocolate – 110g
  • good quality milk chocolate – 110g
  • double cream – 175ml
  • icing sugar, cocoa powder for rolling
  • icing sugar for dusting

Break up the chocolate and place in a large glass mixing bowl. In a milk pan bring the cream to a boil and pour over the chocolate. Mix until the chocolate has melted.

Allow the mixture to cool uncovered at room temperature. This should take 1–2 hours.

Cover a large heavy chopping board in cling film.

When the mixture has set, scoop out a truffle-sized lump with a teaspoon and roll into a ball in the palms of your hands. This starts off being a bit tricky, but after half a dozen odd shaped truffles, you should get the hang of it.

Immediately roll in a coating of your choice (icing sugar, cocoa powder or finely chopped nuts).

Place on chopping board to set.

Verdict: These are VERY rich and much better than anything you can buy commercially. You can also add a slug of your preferred spirit to the truffle mixture.

Drink: Best done sober.
