Now there’s a thing. If you go to lentil.com you just get a crappy illustration of ‘Lenny the Lentil’ and an email link, lentil.co.uk doesn’t seem to have been registered, and lentil.org is the blog site of a senior network engineer called Robert Lister. I mention this only because I can’t think of an introduction to this recipe.

Spicy Lentil Soup

Preparation time: 15 minutes
Cooking time: 25 minutes
Skill level: Easy
Serves: 4

Ingredients

  • red lentils – 150g – washed
  • 1 onion – finely chopped
  • 2 carrots – grated
  • vegetable stock – 1 litre
  • fresh ginger – about ¾ inch cube – grated
  • juice of 1 lime
  • chilli flakes – pinch
  • cumin – tsp
  • oil for frying

Heat some oil in a large pan and fry the ginger and spices for a few minutes.

Add the vegetables and cook for a further 5 minutes. Next add the stock, ‘Lenny the Lentil’ and friends, bring to the boil and simmer for 15 minutes.

Blend until smooth, add the lime juice and serve.

Verdict: For a lentil soup this is relatively light, and has a subtle spiciness about it. The quantity of ginger and chilli could be upped if you fancy something a little more aggressive. We added a swirl of coconut milk which was left over in the fridge.

Drink: Too early.

Entertainment: This was eaten for Sunday lunch, so the entertainment was a carpet of Observer supplements. This week there was a free ‘BOOK OF SPACE’ which will make excellent toilet reading.
